Salad for lunch every weekday


Once every 3 days, I grill beets and chicken marinated with oil and herbs (from my garden) for Alberto's lunch salad. I just realized that I make one of the most elaborate salads I've ever seen in my life every day for him to bring to work lol. The salad consists of microgreens (from my garden), spring mix, arugula, cucumber, beets, baby tomatoes (from my garden), radish, olives, sunflower seeds, chicken and sometimes corn.
