Stuffed Bell Peppers



I'm trying to clear out the fridge out and unfortunately, I do not have minced beef so I improvised and used what I had, chuck roast. I used half of it already to make beef stew a few days ago. I had to cut the meat into small chunks and stir fry it along with jalapenos, onions, garlic, and the top part of the bell pepper.


While that was frying, I prepared the bell pepper and preheat the oven to 350 degrees.


Stuffed the bell pepper with beef stir fry


Added chopped tomatoes on top


Into the oven, it goes for 20 minutes


Take it out and add parmesan cheese on the top


What's better than adding cheese to it?
The answer is... MORE CHEESE!
